Sauteed Zucchini, Onions, and Mushrooms 0

It’s been a while since I posted a recipe because I’m getting lazy in my old age, but we quite enjoyed this at dinner last night. It’s very simple and very tasty. H/T Susan for suggesting adding onion to the mix. Serves two.

Ingredients:

1 medium zucchini, sliced thin (approx. 1/8 inch).

1/2 large or 1 medium union, sliced not quite so thin lengthwise.

1/2 pound white mushrooms or to taste, sliced not quite so thin (approx. 1/4 inch).

Procedure:

Preheat olive oil in skillet over medium low heat until drops of water sprinkled in sizzle.

Add onions and saute until slightly translucent.

Add zucchini and mushrooms. Stir frequently. Continue sauteing until zucchinis and mushrooms are fully wilted and zucchinis are translucent (approx. 20 mins.).

Enjoy.

(If you wish to experiment with herbs such as basil, dill weed, and thyme, feel free to do so, but we quite enjoyed it without.)
